Low Carb Cinnamon Brown Sugar Bars

Powdered gelatin is one ingredient you may see often in keto baking recipes. When you think of gelatin, you may automatically think of regular old jiggly jello! Just as gelatin makes your jello dessert jiggle, it will bind the ingredients in your baked goods, holding them together and giving them a soft yet strong texture. A little bit of powdered gelatin added to a recipe made sans gluten will have a huge, positive impact! Look for unflavored gelatin that is made from beef bones to get the biggest health benefits as well (however, especially when baking, any plain gelatin will work wonderfully- you don’t want to have a beefy taste in your bars!).

Instructions
  1. Grease an eight by eight inch square baking pan with cooking spray and set aside.
  2. Preheat your oven to 325 degrees F.
  3. In a large bowl, beat the butter and golden erythritol until light and fluffy.
  4. Add the egg and vanilla extract to the butter mix and combine thoroughly, scraping down the sides of the bowl as needed to fully incorporate all the ingredients.
  5. Add the almond flour, gelatin powder, cinnamon, xanthan gum, nutmeg, sea salt and baking soda to the bowl and mix until the batter is smooth.
  6. Spread the batter evenly in the prepared pan and then place in the preheated oven.
  7. Bake for about 20 minutes or until the top of the bars are golden brown.
  8. Remove from the oven and cool in the pan.
  9. Beat the cream cheese and remaining 1 Tbsp of butter with the golden erythritol and cinnamon until light and fluffy.
  10. Spread the icing over the top of the cooled bars and then slice and enjoy!
