  1. Whisk together the unsweetened coconut milk, erythritol, and xanthan gum in a small saucepan over medium heat.
  2. Heat until the erythritol is dissolved and simmer until reduced by half – about 1 hour.
  3. Whisk in the vanilla protein powder then set aside to cool for 15 minutes.
  4. Stir the melted cocoa butter into the condensed mixture then stir in the shredded coconut.
