Ingredients
  • 4 cups chopped broccoli
  • 1 tablespoon olive oil
  • 1 small yellow onion (chopped)
  • 8 ounces sliced mushrooms
  • salt and pepper
  • 3 cups cooked chicken thighs (shredded)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 large eggs
Instructions
  1. Preheat the oven to 350°F and lightly grease a 9-inch square baking dish with cooking spray.
  2. Fill a saucepan with 1 inch of water then add a steamer insert.
  3. Add the broccoli to the insert then cover and bring the water to boil.
  4. Steam the broccoli for 6 to 8 minutes until bright green then drain and set aside.
  5. Heat the oil in a medium skillet over medium-high heat.
  6. Add the onions and sauté for 3 to 4 minutes then stir in the mushrooms and season with salt and pepper.
  7. Sauté for 3 to 4 minutes until browned then remove from heat.
  8. Spread the cooked broccoli in the prepared dish with the cooked onions and mushrooms.
  9. Sprinkle with shredded chicken then season with salt and pepper.
  10. Whisk together the remaining ingredients and pour into the casserole dish.
  11. Bake for 35 to 40 minutes until hot and bubbling. Let rest 10 minutes before serving.
