  6. Add the diced onion and cook for 3 minutes, stirring often, until browned.
  7. Add the sliced apples in a single layer then sprinkle with erythritol and cinnamon.
  8. Cook the apples for 5 to 6 minutes, stirring occasionally, until just tender.
  9. Serve the fried apple and onion mixture over the pork medallions.
