  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the onions and mushrooms and sauté for 3 to 4 minutes until browned.
  3. Stir in the zucchini then season with salt and pepper.
  4. Cook for 3 to 4 minutes until zucchini is tender then push the veggies to the sides of the skillet.
  5. Add the ground pork to the middle of the skillet and stir in the garlic powder and onion powder.
  6. Cook until the meat is browned, breaking it up with a wooden spoon.
  7. Once the meat is browned, stir in the cooked veggies and the Dijon mustard
  8. Adjust seasoning to taste and serve hot.
