  1. Preheat the oven to 350°F and line a baking sheet with parchment.
  2. Whisk together the sour cream, paprika, chili powder, garlic powder, onion powder, and cayenne in a small bowl then pour into a large zippered freezer bag.
  3. Add the chicken thighs and shake to coat – set aside for 15 minutes.
  4. Transfer the chicken thighs to a clean bag, letting the excess marinade drip off.
  5. Place the pork rinds in a food processor and pulse into fine crumbs.
  6. Add the crumbs to the bag with the chicken and shake to coat.
  7. Place the chicken on the baking sheet and drizzle with olive oil.
  8. Bake for 40 to 45 minutes until the chicken is cooked through, turning after 20 minutes.
