Ingredients
  • 1 1/2 pounds boneless lamb
  • 1 cup fresh chopped spinach
  • 4 ounces halloumi cheese
  • salt and pepper
Instructions
  1. Preheat the oven to 350°F.
  2. Cut the lamb into four pieces then hammer each one to about ½-inch thick.
  3. Lay out the pieces of lamb and divide the spinach on top of them.
  4. Slice the cheese into four pieces and place one in the middle of each piece of lamb.
  5. Sprinkle with salt and pepper then roll the lamb up around the fillings and secure with toothpicks.
  6. Place the lamb roll-ups in a greased baking dish and season with salt and pepper.
  7. Roast for 30 to 40 minutes until the lamb is cooked through.
