What could be better than keto cheddar mashed cauliflower?

This is for all of your mashed potato lovers out there! One of the most difficult things we hear about the keto diet is giving up the beloved potato. Especially not being able to have fluffy, buttery mashed potatoes as a go-to side dish. We get it. That light, creamy mixture might seem like it's what dreams are made of, but it's LOADED with carbs that will totally wreck your diet! Totally not worth it! Rather than give up hope, and suffer without mashed potatoes, let's talk about options. As you know, there are countless ways to transform dishes into low carb alternatives. The traditional bowl of mashed potatoes happens to be one of them. There are actually ways to make based potatoes without ever using an actual potato. It's like magic!

Low Carb Cheddar Mashed Cauliflower

Cauliflower is the go-to replacement for potatoes when it comes to making mashed “potatoes”. Our recipe for keto cheddar mashed cauliflower is so delicious and easy that you won't believe you've gone this long without! It really does take the place of mashed potatoes! Perhaps you've tried mashed cauliflower in the past, but trust me when I say that this recipe is different! It really has the flavor and texture that you are missing since regular mashed potatoes are eliminated. The creamy texture of our mashed cauliflower is perfected by adding in sour cream, cheese, and butter. All of these additions really make the dish comparable to real mashed potatoes and actually, better!

The subtle garlic flavor is also definitely worth mentioning. The garlic adds a great layer of flavor on its own and also enhances the taste of the cheese and cauliflower. Garlic also goes great with so many other recipes which means this is an ideal side dish for all kinds of recipes. If you're looking for the perfect low carb side, then you HAVE to make this dish for yourself! Pair it with fish, meat or even just top it with some veggies and you will have a complete, delicious, perfectly matched meal.

One of the most attractive things about this particular dish is just how similar the texture is to real mashed potatoes. Plus, the natural flavor of cauliflower is a bit more flavorful. Regular, high carb potatoes do not have very much flavor on their own. That is why you really have to smother mashed potatoes in gravy and butter in order to make them taste a little better. But with our cauliflower mashed potatoes, you get some extra taste without having to add anything to the top of the mas (of course you can if you'd like!). One bite of this dish and you won't feel like you are missing out and instead, you'll wonder where it's been your whole life! Even if you are serving this fantastic side to a mixed crowd, NOBODY is going to complain once they get a bite of this creamy and delicious side.

Try cheddar mashed cauliflower for your next meal, and you are sure to love it just as much as we do! This recipe proves that low carb options are not only better for you, but can even be downright delicious. You won't even miss the potato!
