  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 cloves minced garlic
  • 1/4 teaspoon onion powder
  • Pinch poultry seasoning
  • 1/4 teaspoon xanthan gum
  • 10 ounces chopped cauliflower
  • 1 1/2 cups shredded white cheddar (divided)
Instructions
  1. Preheat oven to 350°.
  2. Whisk together the chicken broth, heavy cream, garlic, onion powder, and poultry seasoning in a medium saucepan.
  3. Sprinkle in the xanthan gum then whisk until well combined.
  4. Cook until thickened, stirring often, then remove from heat.
  5. Stir in the cauliflower and half the cheese then spread in an 8x8-inch glass baking dish.
  6. Sprinkle with the remaining cheese then bake for 45 to 50 minutes until hot and bubbling.
