Ingredients
  • 1 pound mild Italian sausage (ground)
  • 3 ounces almond flour
  • 6 ounces shredded mozzarella cheese
  • 1 large egg
  • 1 teaspoon onion powder
  • salt and pepper
Instructions
  1. Divide the sausage into six equal portions and shape each one into an oblong shape.
  2. Fry the sausages in a skillet over medium-high heat until browned on all sides and cooked through.
  3. Combine the almond flour and mozzarella cheese in a microwave-safe bowl.
  4. Heat on high heat for 1 minute then stir and cook for another 30 seconds.
  5. Stir in the egg, onion powder, salt, and pepper until it forms a dough.
  6. Roll the dough out between two pieces of parchment into a thin rectangular shape.
  7. Cut the dough into six pieces and wrap one piece around each sausage then cut into 3 smaller pieces.
  8. Place the sausage rolls on a parchment-lined baking sheet.
  9. Bake for 12 to 15 minutes at 425°F until golden brown then serve hot.
