Amazing, Low Carb Chocolate Chia Seed Pudding

Are you obsessed with chia pudding like I am? I feel like I will never grow tired of eating chia pudding. Maybe that’s because there is so much you can do with this simple, sweet dish. The versatility keeps it interesting. While I like to switch up my chia pudding, adding in fruits, nuts, and other tasty flavorings (I’ll talk a bit more about this later), I also love my classic chia pudding recipe. This simple, keto-friendly pudding is a sure thing. It is delicious every time. You really can’t go wrong here!

So what goes into my keto chia seed pudding? Only very simple, flavorful ingredients. The whole mix starts with one cup of whole chia seeds. This may seem like a lot and, well, it is! But this recipe will give you six servings of chia pudding that will keep in your fridge for about two weeks. That means you have six delicious breakfasts ready and waiting. (Yes, I eat chia pudding for breakfast! It’s such a perfect morning treat!)
Chia Seed Pudding

All of the ingredients in the recipe are mixed together well and then the pudding needs to sit. Chia seeds soften as they absorb the milk. They also expand and get slightly gelatinous as they absorb the milk. The seeds will quadruple in size very quickly, thickening the milk as they grow. However, you really want to give the pudding a good stir after about 30 minutes. By then, the chia seeds will have really gotten thick and they have a tendency to stick together. You want to break up the clumps of chia so that they absorb the milk evenly and make a nice, uniform pudding. This step is key to making a perfect keto chia seed pudding!

Let the chia pudding sit in the fridge overnight to get nice and thick. The chia seeds will continue to soften and thicken the pudding, making it the perfect consistency. It also makes the pudding nicely chilled. Cold chia pudding is definitely best! In the morning, the pudding will be ready to scoop and serve. You should definitely try it for breakfast as I do- you’ll be happy you did!

In fact, chia pudding is actually a healthy breakfast choice. Chia seeds are very high in antioxidants and low in calories. They are a high-quality, vegan protein as well. All of the carbs in chia are fiber so they are not readily absorbed by the body. This keeps the net carb count of the pudding nice and low. Keto Chia Seed Pudding

My pudding recipe is made with unsweetened cocoa powder which has lots of antioxidants of its own. I sweeten the pudding using So Nourished Pancake Syrup. This gives the dish a nice maple flavor but without any carbs. It is the perfect breakfast chia seed pudding sweetener for sure. A little almond butter makes the pudding more filling and almond extract enhances that almond taste. Chocolate and almond go perfectly!

  1. Mix all of the ingredients together in a large bowl and stir well.
  2. Let the mix sit for about 30 minutes the stir again, breaking up any clumps on the bottom of the bowl.
  3. Cover the bowl and place in the fridge overnight.
  4. In the morning, uncover, stir again then scoop into a small ramekin or cup.
  5. Drizzle the chia pudding with extra melted almond butter and unsweetened chocolate chips. Enjoy!
