Insanely Good Low Carb Chicken

So what is so great about this keto chicken dinner? There’s actually a lot to love. Where should I even start?! Let me begin with the flavor of the dish. The seasoning blend in our keto crack chicken recipe is very similar to ranch dressing. The parsley, dill, chives, basil and garlic powder are all hallmarks of ranch dressing. So, in turn, this chicken has a ranchy taste that is over the top amazing. I know all you ranch lovers out there will rejoice! Who can resist a ranch flavored meal? I know I like to pour that dressing over everything so why to add it to chicken? Sounds incredible.

In addition to the tasty ranch seasonings, the chicken breast are baked in cream cheese. The cream cheese melts to form a thick, creamy sauce that coats every bite of the chicken. Cream cheese is also a great keto ingredient. It is full of healthy fats with very low carbs. But let’s make that cream cheese, ranch sauce taste even better.

Shredded cheddar cheese, crumbled bacon and green onions are all mixed into the sauce after the chicken has cooked. The cheddar cheese melts into the cream cheese, making the ranch flavored sauce taste kind of like mac and cheese sauce. The bacon gives the dish a little crunch, some salty flavor and, well, everyone just loves bacon so we had to add some in!

You’ll also be surprised how much flavor a few chopped green onions can add. Sure, they are mainly used as a pretty garnish but green onions are actually very flavorful. They have a nice, mild onion flavor that really ties the whole meal together.
Now let me tell you about the second thing I love about this keto chicken recipe. It is easy! You can put the whole dish together in just ten minutes, probably even less after you have made it a few times and know your way around the recipe. Keto crack chicken is a complete low carb meal that takes very little effort to make.

This recipe is made in the slow cooker or crockpot. The spices and cream cheese are blended together in a bowl and then spread over chicken breasts in the slow cooker bowl. Cover and cook the chicken over high heat for 3-4 hours. I like to cut into the thickest part of the chicken breast to make sure there is no pink and the chicken is cooked all the way through.

I add chopped broccoli florets after 3 hours of cooking. This gives the broccoli plenty of time to steam but they will not get too over cooked or soggy. I have found that one hour in the slow cooker is the perfect amount of time for broccoli.

Ingredients
  • 2 pounds boneless, skinless chicken breast
  • 2 tbsp dried parsley
  • 1 tbsp dried dill
  • 1 tbsp dried chives
  • 1 tsp dried basil
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 1 pound cream cheese, softened
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup cooked, crumbled bacon
  • 2 tbsp fresh chopped green onions
Instructions
  1. In a large bowl, stir together all the spices and softened cream cheese. Mix well.
  2. Place the chicken breast in the bottom of a slow cooker and then spread the cream cheese mix over the chicken.
  3. Cover and cook the chicken for 4 hours on high heat.
  4. After 3 hours of cooking, stir in the broccoli florets. Cover and continue to cook for the remaining hour.
  5. Use two forks to shred the chicken, mixing it into the cream cheese sauce as you shred.
  6. Add the shredded cheddar cheese, crumbled bacon and green onions and stir to melt the cheese.
  7. Scoop and serve while hot.
