Flavor Packed, Creamy Keto Chicken Casserole

I am a little bit obsessed with ranch dressing. I know I’m not the only one. I could put ranch on everything! Of course it is great on salad and easy to use as a dip, but have you ever tried ranch on chicken before? It is incredible how much flavor ranch can add to a plain chicken dish. Get ready to have your chicken dinners changed forever- this keto chicken bacon ranch casserole is AMAZING.

If you are thinking “is ranch dressing low-carb?”, the answer is not really. Most bottles of ranch dressing that you find in the store has hidden carbs and added sugars that you do not want to be eating. You can find some great low carb ranch dressing though. Primal Kitchen and Hidden Valley both have a keto friendly dressing that you can buy and use straight from the bottle. However, we like to make our own dressing. This recipe from Tasteaholics is a great one and makes a nice big bowl of creamy ranch dressing. But our recipe for chicken bacon ranch casserole doesn’t use real dressing but rather the spices found in ranch.
Low Carb Chicken Bacon Ranch Casserole

The signature flavors of ranch dressing come from the blend of spices found in each bottle. Parsley, dill weed, garlic powder and onion powder are the hallmarks of ranch. We use these herbs to season our chicken and give it that incredible, irresistible ranch taste. Spices and herbs are all keto so you don’t have to worry about any extra carbs sneaking in!

Once you have your ranch spices out and ready to use, you can make this entire recipe in just ten minutes. It all starts with steaming the broccoli and placing it in the bottom of a casserole dish. Then the chicken is seasoned with those ranchy herbs and sautéed to get them nice and browned. Milk, salt and pepper and two kinds of cheese are added to the casserole dish. Bacon crumbles are spread across the top as a tasty garnish. Why not add a third kind of cheese? A sprinkle of parmesan and then the casserole is ready to bake.

It only takes about 20 minutes to bake this cheesy keto casserole and then your entire diner is ready. This one pan is really all you need! Ingredients
  • 2 cups broccoli florets
  • 1 1/2 pounds boneless chicken breast (cubed)
  • 2 cloves chopped garlic
  • 1 tsp dried parsley
  • 1 tsp dried chives
  • 1 tsp dried dill weed
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup shredded parmesan cheese
  • 1 cup cooked bacon (crumbled)
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
Instructions
  1. Preheat your oven to 350 degrees F.
  2. Place the broccoli florets in a large pot of water and bring to a boil. Boil for 5 minutes the drain. Place the cooked broccoli in the bottom of a 9x13 inch casserole dish.
  3. In a large bowl, toss the chicken pieces with the chives, parsley, dill weed, garlic powder, and onion powder.
  4. Heat the olive oil in a large skillet over medium high heat then add the seasoned chicken to the pan. Cook the chicken until no longer pink, stirring occasionally. This should take about 8-10 minutes.
  5. Remove the cooked chicken and spread it in the pan over the broccoli.
  6. Add the milk to the same pan you used to cook the chicken and bring to a simmer, scraping the chicken bits off the bottom of the pan with a spatula.
  7. Add ½ cup of the cheddar cheese and the mozzarella cheese to the milk and stir to melt. Add the salt and pepper and stir.
  8. Pour the cheesy milk into the casserole dish and stir the chicken and broccoli a little to coat in the mix.
  9. Sprinkle the remaining cheddar cheese over the casserole then sprinkle the bacon on top of the cheese.
  10. Sprinkle the parmesan cheese over the top of the dish evenly.
  11. Cook the casserole for 20 minutes or until the sauce begins to bubble. Enjoy while hot!
