Easy Low Carb BBQ Ribs

Fire up your grill, it’s time to cook some ribs! I love a good summertime cookout. The delicious charred taste of meat is something I actually crave all year long. I also just love to be outside and cook outside, staying out of the hot summer kitchen. I actually try to use my grill every day in the summer. Why be inside when I can cook amazing food out in the open air?!

In my many years of culinary experience, I have found that grilling great food is all about seasonings. Sure, the grill does a lot of the work, giving every meal a smoky taste that just can’t be beaten. But, if you really want your grilled foods to stand out, they need to be seasoned well. Grilled food can handle a lot of seasoning and flavors so pile on those spiced! You will be happy you did.
Keto BBQ Ribs with Keto Rib Rub

When you use dry seasonings to flavor meat, it is called a “dry rub”. This is quite the easy culinary term to remember because you are literally rubbing dry seasonings on your meat- dry rub! If you go shopping for dry rub seasonings, you may be surprised to find that lots of them contain sugar. Sugar is mixed in to almost every dry rub in order to add sweetness to the meat and also to help tenderize it. Sugar draws out some of the juices in the meat, making it soft and juicy. Sounds amazing! Except for the part where sugar has a lot of carbs…

That is why I set out to make a delicious keto rub that can be packed onto almost any meat, adding flavor, making meats tender, yet skipping all those carbs. My secret weapon is So Nourished granular erythritol. This natural sweetener has practically no carbs, an amazingly sweet flavor and it does everything regular sugar would do to flavor the meat. It’s amazing! And a low carb grill girl's best friend.
BBQ Ribs with Keto Rib Rub

Once you have your granular erythritol on hand, making a keto dry rib rub is easy. All you need to do is mix together all the dry spices in a big bowl. I actually quadruple this recipe and store it in my spice closet so that I have keto dry rub on hand anytime I need some. It will keep for months! Definitely, something you want to have in stock this summer.

To use the low carb rub, simply rub it all over your meat. I always let the rub sit on my meat for at least ten minutes before tossing it on the grill. This gives a little time for the seasonings to soak into the meat. Coat the seasonings on as thick as you’d like- the more the better I say! A thicker layer of rub will give your meat a blackened taste while a thinner rub will add just a touch of flavor. Both options work so it’s up to you, grill master, to decide how much keto seasonings you want to pack on.

Ingredients
Instructions
  1. Preheat your grill to 300 degrees F. You want to try to maintain this low temperature through the cooking process.
  2. Mix all of the ingredients together in a bowl.
  3. Rub the dry mix over the rack of ribs, coating both sides with the seasoning.
  4. Place the ribs on a piece of foil and close the foil up, around the ribs. The rack should be completely enclosed.
  5. Place the foil-wrapped ribs on the grill and cook for 45 minutes, flip the ribs and then cook for another 45 minutes. The internal temperature of the ribs should be 145 degrees F.
  6. Divide and serve with your favorite keto BBQ sauce!
