Okay, I have to admit, I am a pumpkin spice latte lover. I am definitely one of those people who looks forward to “pumpkin” season so I can enjoy my favorite fall-flavored drink freely. And guess what, fall is just around the corner! Time to drink pumpkin spice lattes every day! But if you want those delicious lattes to be low carb, you may have to make them yourself. Good thing we have crafted this perfect keto pumpkin spice latte recipe just for you!

So what exactly is the difference between a low carb pumpkin spice latte and a regular one you get at your favorite coffee shop? The answer is all in the sugar. Most coffee shops use flavored sugar syrups to give the pumpkin spice latte its signature taste. You may see your barista push that syrup bottle pump two, three or even four times, pouring flavored sugar into your coffee cup. Sure, it tastes delicious but did you know that one pump of syrup has around 10 carbs? So when your barista is over there adding 4 pumps of pumpkin syrup to your latte, they just serve you about 40 carbs in a cup. And that’s not including the carbs from the rest of the ingredients!

To make our keto pumpkin spice latte taste just as good as those coffee shop versions but without the insanely high carb count, we used a few choice ingredients. To being, we use real pumpkin puree. A pumpkin latte should actually contain some pumpkin, right? The pumpkin puree gives the latte a little bit of flavor, a creamy texture and also some nutritional value. Pumpkin is high in fiber and vitamin C.

To give the latte most of its delicious taste, we turned to pumpkin pie spice. You can find little jars of this seasoning in the spice aisle of your grocery store. It is especially popular in the fall (hello, pumpkin season!) but you should be able to find it year round. You can always buy it online and have it shipped if you can’t find it locally- it is worth the hassle, trust me! You can also easily make your own pumpkin pie spice since it is just a blend of cinnamon, nutmeg, allspice and cloves. There are many recipes online that can tell you the exact amount of each spice to use to create your own blend.

Low Carb Pumpkin Spice Latte Recipe

The pumpkin pie spice is actually what makes all pumpkin spice lattes taste great- it’s not actually the pumpkin that you love, it’s the spices! So this ingredient is a must when you make this recipe, don’t skip it! We also recommend adding just the ½ tsp we ask for in order to get the perfect tasting drink. Too much and your latte will be overpowering and spicy. Not enough and your cozy drink will lack flavor. ½ tsp is perfect for two lattes!

To sweeten the drink, we turned to So Nourished GOLD which is a brown sugar-like sweetener. There are no carbs in the sweetener so you get all the delicious sweetness without having to worry about counting carbs. Since the sweetener is made to mimic the taste of brown sugar, it has a warm vanilla flavor that really makes this low carb latte stand out. You can definitely use your favorite low carb sweetener in its place but, if you really want an irresistible latte, go for the GOLD!

Instructions
  1. Place the pumpkin puree and pumpkin pie spice in a small sauce pan and heat over low heat. Stir constantly and cook for 2 minutes to thicken.
  2. Add the so Nourished GOLD and stir to melt the sweetener.
  3. Add both milks and bring the mix to a simmer.
  4. Add the vanilla and whisk the mix well, making it frothy.
  5. Whisk in the espresso or coffee then pour into two mugs.
  6. Top with the keto whipped cream (if using) and enjoy while hot.
