Cream cheese is also full of delicious, energizing fats that are necessary to any fat bomb. Our recipe also has butter to give the bombs a smooth texture. We highly recommend using grass-fed butter as it has been shown to have more antioxidants, vitamin A and a high portion of unsaturated fats than regular butter. It also tends to taste better which is a bonus for your cheesecake bites.

We flavor these bombs with vanilla extract but also with cheesecake extract. If you have never heard of this wonderful flavoring, get ready to be amazed. Cheesecake extract tastes exactly like real cheesecake but it has no carbs and is super concentrated. One drop of this potent stuff and the flavor of freshly baked cheesecake will spread throughout your batter. You can find cheesecake extract online (a quick google search will do!) and one little bottle will last you a while so it is well worth the investment. It has a great sweet taste (no metallic flavor like some artificial sweeteners) and it melts right into the fat bomb batter thanks to the powdered texture. Aren’t low carb sweeteners fantastic! They make keto dieting so simple.

  1. In the bowl of your stand mixer or a regular medium sized mixing bowl, beat the cream cheese, butter and powdered erythritol until light and fluffy.
  2. Add the vanilla, cheesecake extract, coconut oil and salt and blend well.
  3. Scoop the mix into small cupcake liners. Use a small cookie scoop to make perfect balls. You can also use a pastry bag fitted with a large star tip to pipe the mix into the paper liners.
  4. Place the fat bombs in the freezer for one hour to get firm then enjoy! Store in the freezer for up to three months.
