In some ways, it's more crowd-friendly than a regular pecan pie because it makes 16 servings. It would take at least two pies to feed that many people. However, one thing that remains the same is the incredible flavor with a little extra goodness thanks to the chocolate. There's just so much yum in each and every bite.

Low Carb Chocolate Pecan Pie Bars

This is a two-part recipe that focuses on the crust and the filling. You'll notice that both parts require basic ingredients. We're able to keep it low carb friendly by using powdered erythritol and stevia-sweetened chocolate chips. It may be hard for your guests to believe–but there's absolutely no sugar added! You still get all of that delicious sweetness without the unnecessary calories or carbs. That's what we're talking about!

You'll also notice there is absolutely no white flour. Instead, we'll be using almond flour to cut the carbs and still get that texture we need. When it comes to the keto diet, it's all about making minor adjustments to your favorite recipes. You won't miss a thing!

How easy is this recipe? Very. It takes about 30 minutes of prep which is clearly outlined in the recipe. Simply combine the ingredients to make the crust and then press it to the bottom of the pan Next, add the filling and finally top it off with the chocolate chips and pecans. It's so good!

Instructions
  1. Preheat the oven to 325°F and lightly grease the bottom of a 9-inch square baking dish.
  2. To prepare the crust, combine the almond flour, powdered erythritol, and salt in a food processor.
  3. Pulse several times then add the chopped butter and pulse into a crumbled mixture.
  4. Press the crust mixture into the baking dish and bake for 10 to 12 minutes until browned.
  5. To prepare the filling, melt the butter in a medium saucepan over medium-low heat.
  6. Add the powdered erythritol and whisk until melted then remove from heat.
  7. Stir in the heavy cream and vanilla extract then add the eggs and salt.
  8. Whisk until smooth and well combined then pour over the crust.
  9. Sprinkle the pecans and chocolate chips over top then bake for 20 to 25 minutes until set.
  10. Cool the pecan bars for at least 30 minutes before cutting into 16 squares.
