Amazing, Dessert-Like Fat Bombs

I absolutely love eating cookie dough raw, straight out of the bowl. I grew up making cookies with my mom and licking the bowl clean after she had scooped all the dough onto the cookie tray. Of course, now eating raw cookie dough with uncooked eggs is not recommended (salmonella is real!) and, if you are on a low carb diet, regular old cookie dough is probably not on your list of acceptable foods. But I still was missing those cookie dough days- aren’t you?

We decided to come up with a way to eat cookie dough in a safe and keto way. What better way than putting the great taste of cookie dough into a fat bomb?! It doesn’t get any more keto than that! And with this recipe, you will feel like you are eating real cookie dough like in the old days.

Keto Cookie Dough Fat Bombs

So, what is the deal with fat bombs anyway? That is a question every new keto follower asks at one point or another. As you probably know, the keto diet is low/no carbs and high in fats. The idea is that your body will shift from using sugar and carbs as its primary energy source and transition into a state called ketosis where ketones are used as energy. Your body makes ketones from fat so, in order to make ketones and have energy, you need to consume extra fats. That is where the fat bomb comes in.

When you are feeling tired, out of energy, or want to start your day with a little extra oomph, you should pop a fat bomb into your mouth and give your body that extra energy source you need. A nice dose of healthy fats will energize you right away and in a very delicious way.

Cream cheese, butter, and almond flour are the primary sources of fat in this recipe. If possible, look for grass-fed butter which has even more health benefits than the generic kind (more vitamin A, antioxidants, and more unsaturated fats!). These three ingredients not only give the fat bombs a low carb energy source, but they also taste amazing- who doesn’t love eating cream cheese?!

Low Carb Cookie Dough Fat Bombs

To make the fat bombs taste just like cookie dough, we have added some vanilla, chocolate chips and our secret ingredient- golden erythritol. So Nourished GOLD tastes just like brown sugar, a hallmark flavor of chocolate chip cookies. Of course, the golden erythritol is carb-free so you can get that delicious cookie dough taste without the carbs. You can definitely substitute regular erythritol but it won’t have as much cookie-like flavor as if you opt for the golden variety.

These fat bombs are perfect for eating in the morning to give you a tasty, low carb breakfast and they are also wonderful as a mid-day snack. However, you may want to just eat them like a dessert- they do taste like homemade cookie dough, after all! Ingredients
  • 8 oz cream cheese, softened
  • 8 tbsp butter, softened
  • 1/2 cup So Nourished GOLD
  • 1/2 cup almond flour
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1/4 cup Lily's dark chocolate chips
Instructions
  1. In a large mixing bowl, beat the cream cheese and butter together until well combined.
  2. Add the So Nourished GOLD, almond flour, vanilla extract, and salt and mix until smooth.
  3. Stir in the chocolate chips until well mixed in.
  4. Cool the mix in the fridge for at least an hour to help it get nice and firm.
  5. Scoop the cookie dough mix into 1 ½ inch balls, rolling each ball with your hands to make them nice and smooth.
  6. Enjoy immediately or store in an airtight container in the fridge for up to one month.
