Keto Friendly Flan

Finding a keto version of your favorite foods can be quite an adventure. Not everything turns out quite the same as when you use “non-keto” ingredients! However, that is not always a bad thing. A traditional dish with a new twist may turn out even better than the original. While this flan is a little different than a conventional flan, it is still pretty amazing. All the standard flavors of flan are there along with the creaminess that you would want in the dessert. The ingredients are what varies away from a regular old flan recipe but that is just to make a great keto option for you! You are going to love it and here is why….

One of the most noticeable differences in keto flan and a traditional flan is that we have added cream cheese to this low carb recipe. When trying to make a classic recipe into a keto recipe, we try a lot of alterations, and, in this case, the texture of the flan wasn’t perfect when using simple low carb substitutions. Cream cheese, however, adds a thick texture to the dessert that was needed. Cream cheese is also one of the best keto ingredients to bake with as it has essentially no carbs and is nice and dense to help create texture in almost any dessert. We only use a little bit in this recipe but it makes a big difference!

Low Carb Flan

The other variation you may notice when comparing this recipe to other flan recipes is the caramel sauce. In a classic flan recipe, caramelized sugar is placed in the bottom of the ramekin before the flan is baked. When the dessert is removed from the ramekin, beautiful caramel drips down the sides of the flan giving it an amazing flavor. However, low carb sweeteners do not caramelize in the same way that white granulated sugar does. To replace the caramel, we made a caramel sauce to pour over the flan using erythritol, butter, and caramel extract. The taste is just as amazing while allowing you to stick to your keto goals. If you do not have caramel extract, vanilla will do just fine! You can also use golden erythritol for a richer tasting caramel sauce.

When you start thinking about switching up the flavors in this flan, changing the extracts in the flan is a very easy way to make it taste completely new and exciting. Try using almond extract, coconut extract or even a rum extract to create a whole new flavor profile. Since most extracts have zero carbs, you can easily play around with them without worrying about adding carbohydrates to the recipe. Did you know there is even a birthday cake extract? There are so many flavor options and they will all work great in this keto flan recipe.

Ingredients
Caramel Sauce
Instructions
  1. Place the eggs, cream cheese, water, almond milk, 1 ½ tbsp. erythritol and vanilla extract in a blender. Puree until smooth.
  2. Pour the mix into two greased ramekins (6 oz ramekins work perfectly to make 2 servings). Let sit to remove some of the air bubbles.
  3. Preheat your oven to 325 degrees F.
  4. Place the ramekins on a rimmed sheet tray or cake pan and fill with water until the ramekins are at least halfway submerged (Do not let the water get into the filling inside the ramekins!).
  5. Bake the custard for 30 minutes in the preheated oven. The custard should be set in the center and not be liquid.
  6. Chill in the fridge for at least 4 hours.
  7. Make the caramel sauce by melting the butter, erythritol and caramel extract in a small sauce pan, whisking to combine well. Bring to a boil and remove from the heat. Let cool.
  8. Pour the sauce over the chilled custard when you are ready to serve! Enjoy the flan right from the ramekin or invert it on to a plate before adding the caramel.
