Ingredients
  • 1 cup coconut butter
  • 1/2 cup chopped spinach
  • 1/2 cup maca powder
  • 1 teaspoon mint extract
  • 1/4 cup coconut oil divided
  • 1 cup chopped dark chocolate at least 80% cacao
Instructions
  1. Soften the coconut butter in the microwave then place it in a blender.
  2. Add the spinach, maca powder, and mint extract then blend until well combined.
  3. Spoon in 2 tablespoons of the coconut oil and blend until smooth.
  4. Melt together the remaining coconut oil with the dark chocolate in a double boiler.
  5. Spoon the chocolate into a mini muffin pan, filling each cup about a third.
  6. Freeze for 5 minutes until firm.
  7. Spoon the maca mixture into the muffin pan, filling the cups the rest of the way.
  8. Freeze for another 5 minutes until firm then remove from the molds to serve.
