Monk fruit has actually been around for decades but has recently gained popularity since it has zero calories and is about 200 times sweeter than sugar. The monk fruit grows in Southeast Asia and has been used for centuries in traditional Chinese medicine as it is said to have strong antioxidants. In fact, the monk fruit gets its sweetness from those antioxidants which are separated from the fruit and pressed into juice to create a no-calorie sweetener that you can easily use in recipes like this. Cream cheese, yogurt, lemon juice, and vanilla are all blended together to create the “cheesecake” part of the pop. This creamy mix is so delicious, especially when frozen, that you will think you are eating a traditional, baked cheesecake. Add those fresh raspberries in and, wow! Pure Popsicle bliss!

Of course, you can make them in a full-size Popsicle mold, just remember that the macros will increase as the size of the Popsicle increases.

Ingredients
Instructions
  1. Stir together the almond flour, butter, and 2 tablespoons of granular monk fruit blend in a medium bowl.
  2. Press about 2 teaspoons of the mixture into the bottom of each section in an ice cube tray.
  3. In a large bowl, beat together the cream cheese, yogurt, lemon juice, and vanilla extract.
  4. Add the remaining sweetener and beat smooth then spoon into the ice cube tray.
  5. Top each piece with a fresh raspberry and insert a small Popsicle stick into each one.
  6. Freeze for at least 2 hours until solid then use the Popsicle sticks to remove and serve.
