There are no eggs in this recipe and also no flour- two ingredients that usually firm the cheesecake during the baking process. However, this cheesecake is no-bake- no hot oven required! In place of eggs and flour, gelatin is used to help the cheesecake firm and solidify. After all the ingredients are blended and put into the refrigerator, the gelatin will take over, setting the cheesecake and making it into a sliceable dessert.

Ingredients
Instructions
  1. To prepare the base, combine the almond flour, coconut, butter, and granular erythritol in a bowl and stir until well combined.
  2. Press the mixture into the bottom of a greased pie plate and place in the fridge.
  3. Pour the boiling water into a large bowl and stir in the gelatin until fully dissolved.
  4. Stir in the cold water, cream cheese, lemon juice, lemon zest, lime zest, and powdered erythritol.
  5. Blend until smooth with an immersion blender then pour into the prepared crust.
  6. Refrigerate until set then cut into 12 slices to serve.
