  1. Beat the cream cheese until smooth then beat in the peanut butter, erythritol, and vanilla extract.
  2. While beating, drizzle in the heavy cream and beat until smooth and well combined.
  3. Divide the mixture between 12 popsicle molds and place a popsicle stick in each then freeze for about 4 hours or until solid.
  4. Remove the popsicles carefully from the molds and place them on a parchment-lined baking sheet in the freezer.
  5. Place a heatproof bowl over a saucepan of simmering water and add the dark chocolate and coconut oil.
  6. Heat until the chocolate melts then stir smooth and remove from heat.
  7. Dip the popsicles in the chocolate and place them back on the baking sheet and freeze until the chocolate hardens then serve.
