  1. Combine the lemon juice and lemon zest in a double boiler over medium heat.
  2. Stir together the powdered erythritol, psyllium husk, and salt in a small bowl.
  3. Whisk the dry ingredients into the lemon juice mixture then whisk in the coconut milk.
  4. Bring the water in the double boiler to boil then start whisking the mixture constantly until it thickens.
  5. Turn off the heat but keep whisking for a minute then set aside to cool for 1 hour, whisking occasionally.
  6. Cover and chill the curd overnight then spoon into bowls to serve.
