Ingredients
  • 2 large Portobella mushroom caps
  • 6 ounces ground beef (80% lean)
  • 1/4 cup diced yellow onion
  • 2 cloves minced garlic
  • 1 cup fresh baby spinach
  • 1/2 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1 large egg whisked
  • 1/4 cup low-carb marinara sauce
  • 1/4 cup shredded mozzarella cheese
  • Pinch red pepper flakes optional
  • salt and pepper
Instructions
  1. Preheat the oven to 400°F and line a baking sheet with foil then grease with cooking spray.
  2. Remove the stems and gills from the mushroom caps and spray with cooking spray.
  3. Season with salt and pepper then set the mushrooms aside.
  4. Cook the ground beef in a large skillet over medium heat until browned.
  5. Add the onion, garlic, and red pepper then season with salt and cook for 3 to 4 minutes.
  6. Stir in the spinach and cook until wilted, about 1 minute.
  7. Combine the ricotta and parmesan cheese with the egg in a mixing bowl.
  8. Stir in the cooked veggies then spoon into the mushroom caps.
  9. Top each with 2 tablespoons of marinara and some shredded mozzarella.
  10. Bake for 20 to 25 minutes until the cheese is melted. Serve hot.
