Ingredients
  • 1 large head cauliflower (chopped)
  • 3/4 cup shredded cheddar cheese
  • 3 tablespoons sour cream
  • 1 tablespoon butter
  • salt and pepper
  • fresh chopped chives
Instructions
  1. Place the cauliflower in a large saucepan and cover with water.
  2. Bring to a boil and cook for 12 to 18 minutes until the cauliflower is very tender.
  3. Drain the cauliflower and transfer it to a food processor.
  4. Add the cheddar cheese, sour cream, and butter then blend smooth.
  5. Season with salt and pepper to taste then spoon into a bowl.
  6. Top with fresh chopped chives to serve.
