Keeping it Keto at a'Bravo Bistro

As more people take back their health by instituting positive eating habits, restaurants are quickly hopping on board. Restaurants throughout that country now offer vegan, vegetarian and low-carb options. The trend of providing alternatives for all diets has begun to catch on in the States as well, as many online subscription food services now cater to keto and other diets. Small niche restaurants in areas like Seattle and Los Angeles have also followed suit. Even McDonald’s has reduced carbs in their food!

Though McDonald's may have miles to go if it wants to be called a healthy dining experience, the good news is that plenty of other clean eating eateries are popping up. One exciting prospect for those who want to eat out, while keeping to their keto diet, is a’Bravo Bistro.

Adding Low Carb Options

a’Bravo Bistro initially opened in 1999 as a deli focused primarily on catering. Over the last two decades the Green Bay, Wisconsin business expanded its offerings, branching out to become a full-service restaurant. Now marketing themselves as a ‘bistro and wine bar,’ the latest change has been providing healthy dining options.

a’Bravo has a lot to offer customers on a ketogenic diet. There are twelve official low carb options on a’Bravo’s menu, from Seared Ahi Tuna to Spaghetti Squash Meatballs. These dishes conform nicely to the diet, which aims to lower carbohydrate intake. In their place are proteins and leafy greens. The restaurant features a variety of proteins that can be mixed and matched to dishes according to preference. Salads shine at a'Bravo as well. Most dishes are accompanied by veggies, with numerous swapping options offered to add more greens. There are also a number of dairy free, gluten free and vegetarian-friendly items, all amounting to a no-guilt dining experience for all eaters.

Owner Julie Beaudoin is the drive behind these changes. Inspired her own low-carb diet, Julie decided to offer the same opportunity to customers. The response, she says, has been overwhelming.2 In making the menu switches, a’Bravo has seen an incredible increase in traffic. In one year they've doubled profits, and the change has attracted a younger crowd as well as more men–a demographic not often draw to health bar menus.3

No Compromise on Taste

In the last half-century, diet trends have often resulted in some hideous dishes created in the name of health. As a result, many consumers fear foods marketed as “low-sugar” or “diet” as these labels are often synonymous with low flavor.

This isn’t a problem at a’Bravo Bistro, which has been earning rave reviews from critics. Post Crescent’s food review writer Daniel Higgins could not say enough about the great taste of his meal there.4  He dined on the Kohlrabi Pad Thai, Prosciutto Chicken and Spicy Wild Salmon. Cauliflower rice, free range chicken, brussels sprouts and turkey are some of the other keto-friendly items available. There are even low-carb desserts, like coconut chocolate custard. Seeing how the business is booming, it’s clear that these dishes are well received, proving it’s possible to cater to keto without losing out.
