Beaudoin and her team of chefs, Andrew Anderson, Kyle Kolb, Maida Mendoza, Marcus Mendoza, Bailey Zimmerman, Jonathan Reineke, and AJ Rea, continue to push the bounds. Though there are traditional dishes on the menu like lobster mac ‘n' cheese, the new range of gluten-free and low-carb options are the heavy-hitters these days. Guests can enjoy innovative options like Kohlrabi Pad Thai topped with chicken or shrimp and a decadent mix of eggs, house-made peanut sauce, and kohlrabi noodles. Or, you can savor the rich and creamy Prosciutto Chicken stuffed heartily with bacon and finished with a mouth-watering pan sauce.

When á'Bravo Bistro and Wine Bar embarked into this new niche, Beaudoin said she was on a very specific and targeted mission. She wanted to give people alternatives to the standard diet and common restaurant fare. “Customers are receiving it so well because they have an option where they don’t have to go out and go ‘I’ll take the steak, can I just get an extra vegetable?’” says Beaudoin.

After 20 years in the business, Beaudoin has seen significant spikes in last year’s sales – a trend which appears to be continuing. It’s clear that á'Bravo Bistro and Wine Bar hasn’t compromised quality and flavor while venturing into the world of low-carb fare. Instead, it seems that these high fat, low-carb alternatives seem to resonate even more with guests.

They’ve seen an increase in younger diners, as well as more men frequenting the establishment. á'Bravo Bistro and Wine Bar continues to strike an extremely positive chord with their patrons.
