Ingredients
  • 6 large eggs whisked
  • 2 tablespoons heavy cream
  • salt and pepper
  • 1 teaspoon butter
  • 1 tablespoon fresh chopped chives
  • 18 slices uncooked bacon
  • 2 cups shredded cheddar-jack cheese
Instructions
  1. Beat the eggs together with the heavy cream, salt, and pepper.
  2. Heat the butter in a large nonstick skillet over medium heat.
  3. Add the egg mixture and cook for 3 minutes, stirring often, until just set.
  4. Stir in the chives then set aside.
  5. Lay out three pieces of bacon on a cutting board and sprinkle the bottom third with cheese.
  6. Place a spoonful of the eggs on top of the cheese and roll up the bacon around the fillings.
  7. Repeat with the remaining ingredients until you have six roll-ups.
  8. Place three of the roll-ups in a large skillet over medium-high heat until the bacon is crisp.
  9. Remove to paper towels and repeat with the remaining roll-ups. Serve hot.
