  1. Preheat the oven to 350°F and lightly grease a round cake pan with cooking spray.
  2. Combine the mozzarella and cream cheese in a microwave-safe bowl.
  3. Heat on high heat for 1 ½ minutes, stirring after 45 seconds, until melted then stir in the egg.
  4. Add the almond flour and baking powder and stir into a smooth dough then gather into a ball.
  5. Divide the dough into six balls and roll them out into ropes around 12 to 14 inches long then flatten as thin as you can.
  6. Whisk together the So Nourished pancake syrup, water, and cinnamon in a small bowl then brush it over the flattened dough pieces.
  7. Roll each piece into a bun and cut in half lengthwise.
  8. Place the cinnamon rolls in the prepared pan and bake for 20 minutes until browned.
