Our recipe uses pork sausage but you can easily swap it for any other kind of sausage that you love. Turkey sausage or chicken sausage are two delicious and healthy alternatives that you may want to try. You can even find sausage that has herbs mixed in which will add an extra punch of flavor to this dish. A basil chicken sausage or a spicy Italian sausage are perfect ways to make this dish new and exciting after you have had it a few times.

You can also use just broccoli or just cauliflower to make the gratin rather than a combination of the two. Both of these veggies are fairly strong tasting so you may have a preference for one over the other. Or you might just have extra broccoli on hand and no cauliflower in the house- you can still make this dish! Try switching up the cheese as well, using a shredded cheddar or even a stronger tasting blue cheese in place of the mozzarella. Of course, we think this recipe is perfect as written but there are always ways to improve and make it your own. If you find a new sausage, veggie or herb combo that works particularly well, let us know in the comments below- we want to hear all about it!
