There are seemingly endless ways you can get creative when it comes to a low-carb diet but one of my favorites is cauliflower… Yes, it's true,  I really do enjoy it, it satisfies my cravings for rice or potatoes (and I loved eating rice and potatoes).  Its mild taste and texture make it an excellent swap choice for higher calorie, higher carb foods. It's super versatile, making an excellent substitute for anything from rice to pizza crusts, tortillas, and beyond. Did you know that cauliflower has more Vitamin C than oranges? And that it's an excellent source of dietary fiber? It also comes in a beautiful, vibrant shade of purple!

If you eat cauliflower raw, you also get the added benefit of adding sulforaphane to your diet. Sulforaphane consumption has many proven health benefits of various types such as anti-aging benefits and brain function support. The health benefits of cooked cauliflower are also plentiful, for example, the B-5 in steamed cauliflower helps to regulate natural hormone balance. With all those awesome benefits, I don't think I need to plead my case for this cruciferous vegetable any longer, but I will with these 25 delicious cauliflower mash potato recipes!
