Ingredients
  • 3 1/2 cups chopped cauliflower
  • 1 tablespoon olive oil
  • 1 small yellow onion (diced)
  • 1 jalapeno, seeded and minced (optional)
  • 3 cloves minced garlic
  • 1 small Roma tomato (diced)
  • 1 small green pepper (diced)
  • 1 small yellow pepper (diced)
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon paprika
  • salt (to taste)
Instructions
  1. Place the cauliflower in a food processor and pulse into rice-like grains.
  2. Heat the oil in a medium skillet over medium heat.
  3. Add the onion, jalapeno, and garlic then sauté for 3 to 4 minutes until the onion is translucent.
  4. Stir in the tomatoes, peppers, cumin, paprika, and salt then simmer for 5 minutes.
  5. Add the cauliflower rice and stir well then sauté for 3 to 4 minutes until tender. Serve hot.
