Ingredients
  • 1 tablespoon coconut oil
  • 1 large yellow onion diced
  • 2 pounds ground pork sausage
  • 8 large eggs divided
  • 3/4 cup low-carb tomato sauce
  • 1 teaspoon chili powder
  • 6 large eggs
  • 1 tablespoon butter
  • 6 slices cooked bacon
  • 1 medium tomato sliced thin
  • salt and pepper
Instructions
  1. Preheat the oven to 400°F and line a glass baking dish with parchment.
  2. Heat the oil in a skillet over medium heat.
  3. Add the onion and cook until translucent, about 4 to 5 minutes, then transfer to a bowl.
  4. Let cool slightly then blend in the ground pork, two eggs, tomato sauce, and seasonings by hand.
  5. Divide the mixture into 6 portions and roll each into a ball.
