Ingredients
  • 2 pounds ground pork sausage
  • 1 small yellow onion (diced)
  • 3 cloves minced garlic
  • 2 medium zucchini (grated)
  • salt and pepper
  • 2 cups canned coconut milk
  • 6 large eggs
Instructions
  1. Preheat the oven to 350°F and lightly grease a large glass baking dish with cooking spray.
  2. Cook the sausage in a large skillet over medium-high heat until browned.
  3. Stir in the onion and garlic and cook for 3 to 4 minutes until the onions are translucent.
  4. Squeeze as much moisture from the zucchini as you can then place it in a large bowl.
