The two ripe avocados add a creamy chewiness we’ve never encountered in brownies before.  It also adds lots of healthy fats that we keto dieters need. We all have avocados on hand too so you are already prepared to make these brownies! Trust us when we say that once you make brownies using rich, healthy avocados, you will never go back! Anyone who loves a unique rich treat will beat a path to your table!

Coconut oil enhances the creaminess and adds to the richness of the flavor. Coconut oil also has lots of health benefits such as antioxidants and nutritious fats. Coconut oil is a much better option than vegetable or canola oil not only because it is healthier, but it also just tastes so much better! Your brownies will have a great subtle coconut taste that pairs perfectly with the chocolate.

Speaking of chocolate, these brownies are super dark chocolate which is perfect for anyone who loves a rich, decadent brownie. But don't worry- that dark chocolate doesn't mean there are lots of carbs in this recipe! Dark chocolate is actually fairly carb-free. The darker the chocolate, the less carbs! How great is that!

With Erythritol sweetener and chopped dark chocolate, these scrumptious squares are a delicious and thoroughly modern update on Grandma’s cake brownies (sorry, Grandma)!

Instructions
  1. Preheat the oven to 325°F and grease a square baking pan with coconut oil.
  2. Whisk together the cocoa powder, erythritol, baking powder, and salt in a mixing bowl.
  3. In a separate bowl, beat the eggs then whisk in the mashed avocado.
  4. Stir the dry ingredients into the wet then whisk in the coconut oil and melted chocolate.
  5. Spread the batter evenly in the pan and bake for 30 to 35 minutes
  6. Let the brownies cool completely before slicing them into squares to serve.
