Instructions
  1. Line 12 cups of a mini muffin pan with paper liners and set aside.
  2. Melt the coconut oil in a double boiler over medium-low heat.
  3. Whisk in the cocoa powder and monk fruit liquid sweetener until smooth.
  4. Brush the bottoms and sides of each mini muffin cup with the melted chocolate mixture.
  5. Transfer the tin to the freezer until the chocolate is hardened.
  6. Spoon the cocoa butter into the cups and freeze until solid.
  7. Top the cups with the remaining chocolate, garnish with crushed pistachios and freeze until solid then pop out of the molds.
