Coconut Chocolate Cake
  1. Preheat the oven to 350°F and grease a 9-inch round cake pan with coconut oil.
  2. Beat the erythritol and butter in a mixing bowl until light and fluffy.
  3. Add the eggs, beating after each one, then beat in the coconut extract.
  4. In a separate bowl, whisk together the almond flour, coconut flour, cocoa powder, baking powder, and salt.
  5. Whisk the dry ingredients into the wet along with the applesauce until just combined.
  6. Spread the batter in the pan and bake for 25 to 30 minutes until a knife inserted in the center comes out clean.
  7. Cool the cake in the pan for 5 minutes then turn out onto a wire rack to cool completely.
Coconut Frosting
  1. Open the can of coconut milk from the bottom and spoon the solids into a bowl.
  2. Beat the coconut milk with the vanilla and powdered erythritol to taste until light and fluffy.
  3. Frost the cake and sprinkle with shredded coconut, if desired.
