Ingredients
  • water
  • 3 tablespoons powdered gelatin
  • 1/3 cup So Nourished powdered erythritol
  • 1 to 2 teaspoons peppermint extract
  • 1/4 teaspoon salt
  • 4 ounces sugar-free dark chocolate
  • 1/4 cup butter (softened)
Instructions
  1. Line a 9-inch square baking pan with parchment and grease well with coconut oil.
  2. Pour ½ cup of water into the bowl of a stand mixer and sprinkle with gelatin – whisk well then let stand for 10 minutes.
  3. Whisk the powdered erythritol into 2/3 cup water in a small saucepan and bring to a boil over medium heat.
  4. Boil for about 2 minutes until it reaches 210°F then pour it into the gelatin mixture with the mixer running on low speed.
  5. Increase the speed to high and whisk for 15 minutes – add the peppermint extract and salt at 10 minutes.
  6. Pour the marshmallow mixture into the prepared pan and spread evenly.
  7. Allow the marshmallows to dry for at least 6 hours then remove from pan and cut into squares.
  8. Melt the sugar-free dark chocolate and butter in a double boiler over low heat.
  9. Dip the marshmallows in the melted chocolate then place on a plate and chill until the chocolate hardens.
