  1. Melt the dark chocolate and coconut milk in a double boiler over low heat.
  2. Whisk in the powdered erythritol until smooth then whisk in the coconut oil and rum.
  3. Pour the mixture into a glass dish and freeze for 15 to 20 minutes until firm
  4. Scoop the chocolate mixture with a melon baller and roll into balls then freeze 5 minutes.
  5. Roll the truffles in cocoa powder and store in an airtight container
