Did we mention that you can eat it every day? All day? At every meal? Just keep reading…

Pound cake is such a classic cake as it is flavorful, dense and pairs well with so many other things. The rich vanilla flavor is perfect when served on it’s own but it also goes great with some keto berries, topped with a scoop of keto ice cream or with a dollop of coconut whipped cream. There are so many ways to customize a pound cake that it may take you all summer to find just how you love it the best!

In addition to making this tasty low carb pound cake and serving it alongside other keto foods, you can tweak the recipe itself in order to perfect the recipe to your liking. Rather than using vanilla extract, give almond extract a try. If you want to make the pound cake have a little more “fall flavor”, add a dash of nutmeg and ground ginger long with the cinnamon. If you want a more tropical taste, use 1 cup almond flour and 1 cup coconut flour along with some unsweetened coconut flakes mixed it. The possibilities are endless!

Keto Pound Cake Recipe

So, you may be wondering how such a great pound cake can taste so good, be so versatile and still be keto approved. The answer lies in the choice ingredients we use in the recipe. To begin, we say goodbye to sugar and high carbohydrate sweeteners. We replace the sugar found in most pound cake recipes with granular erythritol. Erythritol is a natural sweetener that has zero carbohydrates yet is just as sweet as sugar. It also does not have that funny, metallic taste that some no carb sweeteners have. It is just pure, sweet goodness! It also acts just like sugar when used inside this pound cake recipe so chemically, the recipe will work perfectly. No carbs but a beautiful, sweet cake sounds like a dream!

The next thing we have done to ensure that this pound cake is low carb is to use almond flour in place of traditional white flour. Almond flour is made from ground almonds so it has all the nutritional benefits of nuts and also all the great flavor. Almonds have lots of healthy fats which are also super important on a keto diet! Almond flour is nice and fluffy so it created a baked good that is tender, moist and still much lower in carbohydrates than any cake made with traditional flour.

Low Carb Pound Cake

Eliminating the flour and the sugar makes this pound cake recipe perfect for those on a low carb diet. Our amazing, tasty substitutes will give you a delicious cake that you can’t wait to eat. You will love this cake for breakfast with some berries, or served with ice cream at dessert! Make it for a special occasion or just on a random Tuesday. It is great anytime and for everyone, even those not on a keto diet.
