Classic Italian Keto Tiramisu

One of the benefits of being on a keto diet is that you can still enjoy decadent, mouth-watering desserts any time you need to indulge. Sure, regular white sugar is off limits but there are amazing, low carb sweeteners you can use in its place. You can still enjoy real butter, rich cocoa powder and silky mascarpone cheese, some of which are used in this delicious tiramisu recipe. If you choose to make this incredible keto dessert, you are in for quite the treat and, of course, it will fit right into your keto requirements so you can enjoy every bite guilt-free!

Tiramisu is a classic Italian dessert and the word tiramisu translates to mean “cheer me up” which is exactly what this dessert will do. The classic recipe is made by layering ladyfingers (a crispy cake-like cookie) that have been dipped in coffee with a whipped mix of mascarpone cheese and cocoa powder. The dessert first made an appearance in the 1960s at a restaurant in Veneto, Italy. It quickly gained popularity and variations of the dessert showed up around the world. It is not considered a standard Italian classic and it is clear why- it is a perfect dessert!

Low Carb Tiramisu

You may be hard-pressed to find keto ladyfingers in any store so our recipe utilized a fluffy keto cake, made with a monk fruit and erythritol blend to sweeten the dish. Almond flour is used in place of all-purpose flour and it also adds a lovely nutty taste to the tiramisu. In fact, the almonds go perfectly with the espresso and cocoa powder while also sticking to traditional Italian flavors. The cake absorbs the brewed espresso perfectly, just like ladyfingers do in a traditional tiramisu. There is no need for ladyfingers when you have this perfectly fitting cake recipe!

Mascarpone cheese is a must when making tiramisu. Mascarpone is a traditional triple cream Italian cheese. The cheese is very high in fat which may make it off-limits for people on other diets. Luckily, the keto diet thrives on fats! The silky, semi-sweet cheese will not only make this tiramisu taste amazing but it will also give your body the fat that it needs to burn as energy. All the more reason to have an extra slice!

Mascarpone can be found in almost any grocery store however you can also make your own. Using heavy cream and lemon juice, you can create mascarpone by simmering the mix, straining it, and then letting it sit for 24 hours. There are many exact recipes that you can find online which will guide you to a perfect homemade mascarpone cheese. You may want to make some extra to have on hand to enjoy with fresh berries or spread on a piece of keto bread.

While this keto tiramisu is absolutely amazing and a recipe you will want to make again and again, it is definitely best when enjoyed fresh. Just as with a traditional tiramisu, the cake will get a little soggy the longer it sits. Since the cake is so soft and tender, it absorbs moisture quickly, pulling it from the mascarpone cheese and also getting softer from the coffee soak. So, once assembled, start serving and eating slices as quickly as you can! Definitely sounds like a good plan!

Instructions
  1. Preheat your oven to 350 degrees F and line a 9 inch cake pan with a piece of parchment paper in the bottom
  2. In a large bowl, beat the monk fruit blend with the butter until light and fluffy.
  3. Add the eggs, ¼ cup heavy whipping cream and 1 tsp vanilla extract. Stir to combine well.
  4. Add the almond flour, baking powder and salt and stir into a smooth batter.
  5. Pour the cake batter into the prepared pan and spread to smooth.
  6. Bake the cake for about 25 minutes in the preheated oven or until the edges begin to turn golden brown. Remove from the oven and cool.
  7. While the cake is cooling make the filling for the cake. Add the 1 ¼ cup heavy whipping cream, powdered erythritol and vanilla to a large bowl and whip until soft peaks form.
  8. Add the mascarpone cheese and whip again until stiff.
  9. In a separate small bowl, mix together the brewed espresso and 1 Tbsp granulated erythritol.
  10. Once the cake has cooled, gently remove it from the pan and cut it in half. Set the top of the cake aside and place the bottom cake on a platter or serving tray.
  11. Drizzle half the espresso mixture over the bottom half of the cake and then spread half of the mascarpone whipped cream across the cake.
  12. Place the top half of the cake on top of the mascarpone layer and then drizzle the top cake with the remaining espresso.
  13. Spread the last of the mascarpone whipped cream over the cake and dust the cake with the cocoa powder.
  14. Slice and enjoy! Store in the fridge for 4-5 days.
