  1. Grease a small skillet with cooking spray and heat it over medium heat.
  2. Add the pecans and cook until they are toasted, stirring often, then remove from heat and set aside to cool completely.
  3. Melt the coconut oil in a medium saucepan over medium-low heat.
  4. Stir in the cream cheese until it melts together with the coconut oil.
  5. Pour the mixture into a heat-proof mixing bowl then add the pumpkin, monk fruit sweetener, pumpkin pie spice, and vanilla extract.
  6. Beat with a hand mixer until smooth and well combined.
  7. Spoon the mixture into a silicone candy mold – you’ll get about 24 small bites.
  8. Top each bite with a toasted pecan and a sprinkle of cinnamon.
  9. Freeze until the bites are solid, about 4 hours, then pop them out of the mold.
