The first step to making panna cotta is to grease your ramekins. This will help prevent the panna cotta from sticking to the ramekins as you may decide to flip them out of the container, serving it as a free-standing dessert on a plate. If you do not have half cup sized ramekins, you can opt for larger or smaller cups, just keep in mind that a bigger sized panna cotta will take a longer time to fully cool and set.

The gelatin is then bloomed in the cream which means it is allowed to absorb moisture, making it thick and jiggly. This step is essential as it will prevent the gelatin from clumping when heated and also ensure that your panna cotta has a nice smooth texture. After the gelatin mix has heated, cooling it is another important step. If you add the yogurt to the mix while it is too hot, the milk in the yogurt may cook or curdle. So, once again, to get that smooth panna cotta texture, be sure to let the dish cool at every stage necessary!

Once the panna cotta mix is all together, allow it to set for at least 4 hours in the ramekins. The longer the panna cotta cools, the firmer it will be, making a more stable dessert and giving it the texture you are dreaming of.

Ingredients

  1. Lightly grease 4 half-cup ramekins with cooking spray and set aside.
  2. Pour ½ cup of heavy cream into a medium saucepan and sprinkle the gelatin over it.
  3. Let the gelatin sit for 3 to 4 minutes then whisk in the remaining cream along with the coffee and 6 tbsp erythritol.
  4. Heat over medium heat, whisking until the gelatin is dissolved, then cook until steaming – do not boil.
  5. Remove from heat let cool. Whisk in the yogurt, vanilla, and liquid stevia extract.
  6. Divide the mixture evenly among the ramekins then cover and chill for at least 4 hours or until set.
  7. Place the strawberries and powdered erythritol in a food processor and blend until pureed.
  8. Strain the mixture through a fine mesh sieve into a bowl, pressing to extract as much liquid as possible.
  9. Stir the lemon juice into the strained mixture then spoon over the panna cottas to serve.
