  1. Whisk together ¼ cup of the heavy cream, coconut oil, and vanilla in a small saucepan.
  2. Heat over medium heat until well combined then reduce heat and simmer on low for about 5 minutes until thickened and creamy.
  3. Remove from heat and whisk in the egg yolk then let cool to room temperature.
  4. Whip the remaining cream until stiff peaks form then fold into the vanilla cream mixture.
  5. Chill the vanilla cream for 30 minutes while you prepare the peaches.
  6. Heat the butter in a skillet over medium heat.
  7. Add the sliced peaches and sauté until just browned then toss with cinnamon.
  8. Spoon the vanilla cream into bowls and top with the warm peaches.
