Keto Bacon, Zucchini Mini Burgers

This recipe for zucchini burger bites is the perfect crowd pleaser and, of course, it is low carb too! You don’t need any burger buns to enjoy burger bites when you have a delicious zucchini.

Of course, we can’t just wrap the burgers in zucchini, we also needed to add some bacon! Bacon is an amazing addition to any burger and, in this specific recipe, it wraps around the burger to create a wonderful, crisp shell that adds flavor, texture, and sticks to the recipe's low carb theme. No one can resist a burger wrapped in bacon!

Low Carb Zucchini Burger Bites

The thin zucchini strips and the slices of bacon replace a standard burger bun in this recipe, acting as a “holder”. The zucchini strips are wrapped around the mini burger, enclosing it completely, and then a strip of bacon is wrapped around as well. Wrapping the burgers actually has multiple purposes. The wrapped zucchini acts as a way to pick up the burger bite, keeping your fingers grease free. The bacon helps keep moisture in the burger as it cooks, making for a juicy, tender burger bite.

The convenient size of these burgers are perfect for a party. You can line the burger bites up on a tray and allow people to grab as many as they’d like. You can also stick a toothpick inside them for an even easier serving option. Then, there are no plates needed! This makes for an excellent appetizer and also easy clean up (no dishes to wash afterward!).

The burgers themselves are made with a few simple ingredients and should be something you have on hand at home already. Just a few spices and an egg is really all you need! But don’t be fooled by the simplicity, there is lots of flavor inside these mini burgers!

If you want to try a different meat, simply replace the ground beef with ground turkey, ground chicken or even ground pork. A mixture of meats will make an especially unique burger with complex flavors that will make people ask you for this recipe! Try using 1/3 ground beef, 1/3 ground pork and 1/3 ground turkey for an awesome mini burger bite.

Ingredients
  • 1 pound ground beef
  • 1 egg
  • 3/4 tsp ground black pepper
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp garlic powder
  • 6 strips bacon
  • 1 medium zucchini
  • 1 tbsp olive oil
Instructions
  1. In a large bowl, mix the ground beef, egg, black pepper, Worcestershire sauce, salt, and garlic powder together. Use your hands to really blend everything well.
  2. Divide the burger mix into 12 even sized balls. Roll each with your hands so they are smooth then gently press each ball to flatten slightly.
  3. Cut the bacon in half lengthwise, giving you twelve long and skinny strips.
  4. Use a large peeler to make thin ribbons from the zucchini, peeling the entire length of the zucchini from top to bottom.
  5. Wrap each burger bite in one strip of bacon then wrap it in a zucchini ribbon.
  6. Place the wrapped burger bites on a lined sheet tray.
  7. Brush the wrapped zucchini with olive oil then place in a 350 degree oven.
  8. Bake for 12 minutes. Serve while hot!
