Flavorful, Low Carb Summer Salad

It is always nice to have some easy, simple recipes on hand to make in the summertime. When the heat goes up, no one wants to be stuck in a kitchen cooking! You especially want to find recipes that avoid the oven and keep your kitchen cool while also still creating flavorful, exciting dishes. This chopped Greek summer salad is a recipe you are going to want to make over and over again, especially when that summer heat is at its peak.
Other than being extremely easy to make, this salad is loaded with a wide variety of spices that all come together to pack a big flavor punch. Who says you need carbs to add flavor when you can use any spice in the whole world?! A combination of vinegar, Italian seasoning, and garlic powder are the highlights of the homemade dressing that accompanies this salad. They are all whisked together to make a light yet flavorful (and super easy!) dressing that you will love. You may want to triple the recipe and save some for future salads as well- you’re going to want it on hand!
Low Carb Chopped Greek Summer Salad
Another important part of this salad is the raw broccoli and cauliflower that make up a large portion of the dish. While both of these veggies tend to be steamed or cooked, keeping them raw has lots of benefits. When veggies are cooked, they lose nutrients in the cooking liquid and, while still healthy, they are a little less so.
For example, steaming broccoli has been shown to greatly reduce the vitamin C content as well as the soluble protein it naturally has. Keeping the broccoli in its raw form not only preserves all of the nutrients in the vegetables, but it also adds a great crunch to the salad. Raw cauliflower contains a little bit of every single vitamin and mineral that your body needs. From fiber to vitamin C, folate to vitamin b6, cauliflower has it all! Both cauliflower and broccoli are considered excellent sources of vitamins and minerals and this recipe takes full advantage of that, highlighting these tasty vegetables.

In true Greek fashion, this salad is full of mozzarella, olives, tomatoes and ham, a few staples in Greek cooking. You can’t call a salad “Greek” without olives!! Once you mix everything together, you will have a mouthwatering salad that will help you beat the summer heat, stick to your low-calorie diet and fill your belly!

Ingredients
  • 1/2 cup olive oil
  • 1/4 cup white wine vine
  • 2 tbsp red wine vinegar
  • 1 tbsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • 2 cups broccoli (finely chopped)
  • 2 cups cauliflower (finely chopped)
  • 1 cup ham (diced)
  • 1 cup cherry tomatoes (quartered)
  • 1/2 cup black olives (sliced)
  • 8 oz fresh mozzarella (chopped)
  • 1/2 cup fresh grated Parmesan cheese
  • salt
  • Fresh cracked pepper
Instructions
  1. Whisk together the olive oil, vinegars, Italian seasoning, and garlic powder in a large bowl.
  2. Toss in the broccoli, cauliflower, ham, tomatoes, and olives.
  3. Add the chopped mozzarella then season with salt and pepper and toss to combine.
  4. Cover and chill until ready to serve then garnish with grated parmesan.
