Ingredients
  • 4 cups fresh baby spinach
  • 3 Tbsp olive oil
  • salt and pepper
  • 2 Tbsp fresh lemon juice
  • 3/4 cup fresh sliced strawberries
  • 1/4 cup fresh blueberries
  • 1.5 ounces crumbled feta cheese
Instructions
  1. Place the spinach in a large bowl and toss with the olive oil and salt.
  2. Add the lemon juice and pepper then toss to coat.
  3. Divide between two salad plates and top with the berries and feta to serve.
