Keto Friendly Grilled Cheese

The thing that many new keto dieters say they miss the most is bread. Most bread is not keto-friendly as it tends to be full of white flour and sugars that just won’t fit into a keto lifestyle. The fact is that many “traditional” diets incorporate bread into one meal or another. Sandwiches are one category that is hard to navigate when you can’t use regular store-bought bread. However, after lots of experimenting, we have found many ways to make bread that will work on a keto diet. From cloud bread to zucchini bread, we have made them all and you can find lots of recipes right here on our site. There will definitely be one or two that you love!

This recipe uses one of our favorite breads- zucchini bread- to make a classic grilled cheese sandwich. Sure, zucchini bread may not be the first kind of bread that pops into mind when you think about grilled cheese but we assure you that one bite will make you a true believer in the zucchini bread grilled cheese! Not only is the bread flavorful and keto-approved, but it adds a much-needed vegetable to your meal! Zucchini is a nice, mild vegetable as well so those who aren't huge veggie eaters will still really enjoy this sandwich. You may even want to eat the zucchini bread plain with just a little butter- a perfect breakfast!

Low Carb Grilled Cheese with Zucchini Bread

To make the zucchini bread, you won’t need a loaf pan or bread machine to help you. This bread is not baked in the traditional fashion. Instead, you will be forming the zucchini bread batter by hand, making the slices sized how you need them! Make the squares a little bigger if you love a large grilled cheese or make the batter into small, bite-sized circles so that you can make “cocktail” sized sandwiches. You can also simply spread the batter across the whole tray and bake it as one sheet. Cut the bread slices after it bakes for an even easier option. You can even freeze the zucchini bread after it has been cooked and cooled. Then, anytime you need a few slices, just pull them out of the freezer and let them thaw. The taste and texture will be just as great as when you first made them!

Once you have made your keto zucchini bread, you will assemble and sear your grilled cheese. Our recipe uses cheddar cheese since that is a grilled cheese go-to option. However, the zucchini bread would also pair well with Swiss cheese, Munster cheese, and even blue cheese crumbles if you are looking for a strong taste. Add a piece of deli-sliced ham or turkey to your sandwich if you need to increase your protein intake for the day. This recipe really is customizable!

Ingredients
  • 4 cups grated zucchini
  • 1 egg
  • 1/2 cup shredded mozzarella cheese
  • 4 tbsp shredded parmesan cheese
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/3 cup shredded cheddar cheese
  • 1 tbsp butter
Instructions
  1. Preheat your oven to 450 degrees F and line a flat sheet tray with greased parchment paper or a silicone baking mat.
  2. Add the zucchini to a medium sized microwave safe bowl and then microwave for 6 minutes. Allow to cool completely and then place the cooked zucchini on a towel or piece of cheesecloth and squeeze out all the moisture- you should see almost a cup of water come out. Get the zucchini as dry as possible as this will help with the bread.
  3. In a new bowl, mix the dried zucchini, egg, mozzarella, parmesan, basil, salt and pepper. Stir well to combine.
  4. Scoop the batter onto the prepared sheet tray into 4 and shape the zucchini into squares the size of a piece of bread.
  5. Bake the zucchini bread slices in the preheated oven for 20 minutes. The tops should be golden brown. Remove from the oven and let cool for at least 10 minutes. Once cool, carefully remove from the sheet tray and move to a plate.
  6. Sprinkle two of the zucchini bread slices with the cheddar cheese and then top with the other slices of bread, making two sandwiches.
  7. Place the butter in a medium sauté pan and melt over medium heat. Place both sandwiches in the pan and sear on one side for 4 minutes, flip and cook for another 4 minutes.
  8. Serve while hot and melty!
