Delicious Cheesy Waffle Bread

Following a keto diet or any low carb diet will immediately take bread off the table. After all, regular old bread is packed with sugars and carbs that you just don’t need! But what if you use to be a “sandwich person” or perhaps you loved to make pasta sauce and soak it up with homemade bread? Well, you are in luck because the chaffle is about to change your keto world!

Chaffle is a combination of the word waffle and cheese as it is exactly that- a waffle made primarily with cheese! A batter is made using almond flour, eggs, cheese, and a few other little ingredients to help bind and flavor the chaffle. Then, the batter is cooked in a waffle iron until golden brown. The result is a savory, cheesy waffle that can easily be used as bread! Imagine having a sandwich that has two cheesy waffles as the “bread”- you could fill it with anything! And sopping up that pasta sauce has never been tastier than when you use a chaffle. This is seriously a recipe you are going to go crazy for.

Low Carb Chaffle

A huge plus of the chaffle is that it freezes very well. Make a big batch of batter, bake it all and then wrap two chaffles together in bags or plastic wrap. Freeze them for up to three months. Anytime you need two pieces of “bread” to make a sandwich, you can take a pack of chaffles out and let it defrost in the fridge overnight or heat them in the microwave for 20 seconds to thaw. They will be just as good as when they are hot out of the waffle iron!

Keto Chaffle

Our recipe uses mozzarella cheese as the primary ingredient in the chaffle and there is a very good reason why. Mozzarella has a fantastic, stretchy texture that is able to hold the chaffle together while also giving it some nice flexibility. It also has a fairly neutral yet salty taste that pairs well with almost anything. You can choose to give different hard cheeses a try but we recommend sticking to mostly mozzarella cheese. For example, use one cup of shredded mozzarella and one cup of shredded cheddar cheese. Try to avoid very soft cheese (blue cheese or brie, for example) as they will simply melt in the hot waffle iron and make the chaffle fall apart.

Once you make a batch of these chaffles, you can freeze the ones that you don't use. Just place them in a Ziploc bag and stick them in the freezer. Whenever you need a chaffle or a piece of “bread” just take them out of the freezer and thaw at room temperature. They should only take about an hour to thaw completely but, if you need to speed up the process, pop one in the microwave for about 15 seconds or in the toaster for about a minute to bring your chaffle back to perfectly baked perfection. You can then use it however you'd like!

Ingredients
Instructions
  1. Preheat your waffle maker according to the manufacturer’s directions.
  2. In a medium sized bowl, whisk together the eggs, salt, and vanilla extract.
  3. In a separate bowl, combine the almond flour, cinnamon and baking powder.
  4. Add the dry ingredients to the egg mixture and stir well.
  5. Add the shredded mozzarella to the bowl and stir well, making sure the cheese is coated completely in the egg mix.
  6. Spray your waffle maker with non stick cooking spray and then add about ½ cup of chaffle batter to the waffle maker.
  7. Cook the waffle according to your waffle maker directions (they will take the same amount of time to cook as a traditional waffle, about 5 minutes). Once the chaffle is golden brown, remove it from the waffle maker.
  8. Spray the waffle maker again and repeat the cooking process with the remaining batter.
